BBQ’d Baby Back Ribs...
Serves about 3-4 people
Ingredients
- 2 racks baby back ribs – approx. 4.5 lbs. Go
to a good butcher!
- 1 can (14oz.) Chicken Broth – NO MSG! IT’S
BAD FOR YOU!!!
- 1 Granny Smith Apple
- 1 Orange
- 3 Tbs liquid smoke – Hickory
- Golden Toad – Prime Steak Rub
- Golden Toad – Chipotle BBQ Finishing Sauce
Preparation
- Cut the Rib Racks in half
- Remove the “sinew” layer on the bottom of the
ribs (the white tough skin like stuff)
- Score the bottom of the ribs with a sharp knife in a criss-cross
pattern
- Rub the racks with Golden Toad Prime Steak Rub thoroughly
on all sides – let sit for a minimum of 30 minutes
- Pour the Chicken Broth in a large deep baking/roasting pan
(ours is 17.5” long x 11.5” wide x 5.5” deep
on the inside)
- Core the apple and discard the core. Cut the apple
into cubes and place in pan
- Cut the orange into cubes, squeeze juice from cubes into
pan and place cubes with rind into pan
- Add 3 Tablespoons of liquid Hickory Smoke
- Place a metal grate in roasting pan to keep ribs out of
juices
- Place Rib Racks on grate in pan, cover pan with foil and
place in 275° pre-heated oven and bake for 1 ¾ hrs
until meat is tender.
- Remove foil and let the racks sit in the pan for 15 minutes
- Pre-heat grill to 450°
- Cover ribs with Golden Toad Chipotle BBQ Finishing Sauce
- Grill for about 8-10 minutes turning twice brushing with
more sauce at each turn.
- Remove from grill and gently cover with foil – let
sit for a few minutes before serving – always let your
meat rest after grilling!
- Serve with sauce for dipping if necessary
- Enjoy!
