Drunken BBQ’d Chicken
Serves 2
Ingredients
- 4 to 5 lb roaster chicken
- 1 can beer (I use Coors)
- Golden Toad Prime Steak Rub
- Golden Toad Chipotle BBQ Finishing Sauce
Preparation
- Rinse chicken thoroughly
- Season inside and out with Golden Toad Prime Steak Rub
- Using a can opener, open a beer can (several openings)
- Place chicken upright on can, so can is inside chicken cavity
- Place on a shallow pan and grill “standing up” at
350° for about 20 minutes per pound or until the internal temperature of the chicken is at 180° (this can also be done in an oven)
- Glaze with Golden Toad Chipotle BBQ Finishing Sauce and
finish for 5-10 minutes
- Remove from grill and beer can and let the bird rest
- Cut in half and Serve
- Enjoy!
