Shrimp on the Bar-B – Toad Style...
Ingredients
- Large Tiger Shrimp 20 count or larger – I like
Tiger Shrimp, look for nice blue color in the raw shrimp.
- Pepper Jack Cheese – I use a good Wisconsin Pepper
Jack from Whole Foods Market
- Bacon – no nitrates, they’re bad for you. You
can find natural bacon at Whole Foods Market
- Golden Toad – Prime Steak Rub
- Golden Toad – Chipotle BBQ Finishing Sauce
Preparation
- Butterfly (Filet) the shrimp, do not cut all the way through
them. Remove the veins then lay the shrimp flat, cut-side up.
- Sprinkle with Golden Toad Prime Steak Rub to taste.
- Stuff with Pepper Jack Cheese. Cut the cheese
into thin strips so you can lay them in the shrimp.
- Fold the shrimp so they are back to their original form.
- Wrap each shrimp with ½ piece of bacon.
- Skewer the stuffed shrimp with bamboo skewers.
- Pre-Heat your grill to 450°
- Brush skewered Shrimp with Golden Toad Chipotle BBQ Finishing
Sauce
- Grill until shrimp and bacon is cooked – brush with
Golden Toad Chipotle BBQ Finishing Sauce when you turn the skewers. Brush
with a little more Golden Toad Chipotle BBQ Finishing Sauce
before removing from grill.
- Serve on a bed of greens with a side of Golden Toad Chipotle
BBQ Finishing Sauce for dipping.
